Italian Meat Loaf
With all this cold weather, how about some comfort food? Here is a recipe for one of my favorites!
1 egg, beaten
1 can tomato sauce
1/2 cup dry bread crumbs
1/2 cup finely chopped onion
1/2 cup finely chopped green pepper
1 teaspoon dried oregano
1 teaspoon salt
1/8 teaspoon pepper
1-1 1/2 pounds ground beef
1/2 cup shredded mozzarella cheese
2 tablespoons parmesan cheese
In a bowl, combine the egg, half of the tomato sauce, bread crumbs, onion and green pepper if desired, 1/2 teaspoon oregano, salt and pepper. Add the beef and mix it well. On a large piece of heavy-duty foil, pat meat mixture into a rectangle (14 in. x 8 in). Sprinkle cheeses to within 1/2 inches of the edges. Roll it up, jelly-roll style, starting with a short side and peeling foil away while rolling. Seal the seam and ends. Transfer this to a loaf pan. Microwave, uncovered, at 50% power for 12 minutes. Rotate it a half turn during cooking. Drain this. Continue cooking on 50% power for 20 minutes until the meat is no longer pink. Rotate the dish at about ten minutes. In a bowl, combine the remaining tomato sauce and oregano. Pour this over the meat loaf. Microwave it on high for two minutes. Then, cover it loosely with foil and let it sit for five minutes before serving.

Garlic Chicken
Here is a recipe for an entree dish. I have never tried it before so let me know how it works!
2 cups water
2 cubes chicken bouillon
1/2 cup butter
1 tablespoon dried Italian seasoning (optional)
1/2 teaspoon dried dill weed (optional)
1 teaspoon garlic salt, or to taste
4 skinless, boneless chicken breast halves
Pour the water into a casserole dish, and heat it until it is boiling. It should be about two minutes. Stir in the bouillon cubes, butter, italian seasoning, dill and garlic salt. Pierce the chicken on one side with a fork and lay it pierced side down into the mixture. Cover this and cook it for about ten minutes. The chicken should be no longer pink. Juices should run clear. Sit back and enjoy!

12 minute cake!
So midterms are coming up here in a few weeks, and to solve the stress how about a piece of cake? This recipe is really easy. It only takes about twelve minutes and then you can sit back and enjoy! You will need:
1 package of yellow cake mix
3 eggs
1 can of apple pie filling
1/2 cup applesauce
You need to first mix the box of cake mix, eggs, pie filling, and applesauce until it is a nice mixture. Then pour this into any pan that you can microwave. If you want to get fancy, you can use a bundt pan. I realize many college kids don’t normally have bundt pans so you can substitute with any round pan and placing a cup in the middle to create the hole. Cook this on high for about 6 minutes and 30 seconds. Turn the pan and bake it again for the same amount of time. Take it out of the microwave and let it sit (covered) for about five minutes. Now you can be creative and add some whipped topping, frosting, sprinkles, or whatever fills your sweet tooth!

Cheesy Potato Soup
Need some comfort food after walking to class in the cold weather? Here is a recipe for potato soup that is completely cooked in the microwave! You will need to gather up:
Four potatoes
1 1/2 tablespoons butter
1 medium onion, sliced
2 tablespoons flour
1 teaspoon beef bouillon granules
2 cups water
1 (12 ounce) can evaporated milk
1 cup Colby cheese or mild brick cheese, shredded (4 ounces)
1 teaspoon chopped parsley
3/4 teaspoon Worcestershire sauce
3/4 teaspoon salt
3/4 teaspoon pepper
Cook the potatoes in the microwave until they are soft. Put the butter and onions into a bowl. Cook them on high for about two minutes or until tender. Now, stir in the flour and add bouillon and water. Stir this all very well. Cook this mixture for another two minutes. Cut the potatoes into small chunks. Add the potatoes, evaporated milk, cheese, and seasonings to the hot mixture. Cook it again for another 2 1/2 to 4 minutes until the cheese is melted and the soup is warm. I hope you like it!

Microwave Granola
Here is another little snack recipe for microwave granola. I like to put it on yogurt, but you can also use it on oatmeal or cereal to add some flavor. You will need:
3 cups quick cooking oats
1/3 cup wheat germ
1 cup rice crispy
1/2 teaspoon cinnamon
1/3 cup oil
1/3 cup white corn syrup
1/3 cup chopped nuts
1/3 up sunflower seeds
Place oats in an ungreased 2 qt. dish. Heat it in the microwave on high for 2 1/2 minutes. Add the wheat germ, rice crispy, nuts, sunflower seeds, cinnamon, and brown sugar. Stir to blend it together. Add the oil, honey, vanilla, and syrup. Toss this mixture lightly until it is coated. Cook this in the microwave on slow for 6 1/2 to 7 minutes or until heated through. Stir it twice during cooking. Be sure to stir to the bottom or it will burn. Now you may add some raisins, chocolate chips, or any other ingredient you enjoy if you wish. Press the granola firmly into a pan. Let it cool and break it into pieces. You will need to store it in a tightly covered container. Enjoy!
